Nashville Loves Food: Noble Springs Dairy Farm
I had the opportunity to visit the Noble Springs Dairy farm and meet owners Justyne and Dustin Noble for the Nashville Loves Food project with Lithographics. Located minutes from downtown Franklin in Tennessee their farm produces and ships a variety of farmstead goat cheeses like Chevre, Harpeth Fleur, Southall Gouda and Feta. They learned their process from a Dutch cheese maker who gave away the secrets of making delicious goat cheese. Their southern creamery also offers goat milk fudge, goat milk soaps and bottled milk. They take pride in raising their goats with a forage-based diet and they slow pasteurize their milk at 145 degrees in small vats so it is never mechanically homogenized. And if you have kids they offer farm tours! The kiddos can pet the animals, learn about the goats, farm life, learn how cheese is made and the tour offers many hands on opportunities.
